Same! It's a good day to spend with family and celebrate an American tradition.

I have recently heard several people call Thanksgiving "the most American holiday." It seems to me like they're forgetting a certain day in July that is more central to American culture. Am I missing something?

"American" in the sense that we've set aside a day each year to express our gratitude for beneficence. Many countries obviously celebrate their particular day of independence.

But other countries have days of gratitude too, including our neighbors to the north. I heard it argued that Thanksgiving is "the most American" in the sense that it involved a coming together of the white European settlers and the native Americans, which is a stretch of historical interpretation. Perhaps because it is the earliest holiday celebrated here, occurring well before 1776 even if not officially so until later?
